Role Summary
Poptein is setting up its first dedicated production facility (initial scope ~1 MT/month, with...
planned scale-up). We are looking for a hands-on Manufacturing Lead to be the single point
owner of this facility - from green-field setup through to steady-state production. You will own
machinery, layout, labour, and output, building a clean, efficient, audit-ready plant from the
ground up and running it to cost, quality, and productivity targets.
Key Responsibilities
Factory Setup & Commissioning
* Lead end-to-end setup of the new facility: site readiness, utilities, plant layout, equipment
installation and commissioning.
* Own machinery procurement support - spec-ing equipment, coordinating with vendors,
overseeing installation, trial runs, and acceptance.
* Design a GMP-compliant layout and ensure the facility is FSSAI-licensed and audit-ready
from day one.
Production & Productivity
* Run daily production against plan; own OEE, yield, line efficiency, and downtime reduction.
* Build and enforce SOPs, batch records, and quality checkpoints across all SKUs and pack
formats.
* Hold cost-per-pack to model targets and flag deviations early.
* Plan production against demand across q-commerce, retail, gyms, and export orders.
Labour & Team
* Hire, train, and manage shop-floor labour and shift supervisors.
* Set staffing, shift structure, and productivity norms; manage attendance, safety, hygiene,
and discipline.
* Build a culture of consistency, food safety, and continuous improvement on the floor.
Maintenance & Supply Coordination
* Establish preventive maintenance schedules and minimise breakdowns.
* Coordinate with supply chain on raw material availability, FIFO, and zero stockouts.
Ideal Profile* 7-12 years in food / FMCG manufacturing, with at least one green-field or expansion
factory set up and owned end-to-end.
* Hands-on experience with extruded / popped snack lines (popcorn, extruded snacks, or
similar) strongly preferred.
* Strong grounding in FSSAI, GMP, and food-safety systems.
* Working knowledge of lean manufacturing and shop-floor labour management.
* Comfortable in an early-stage startup environment - scrappy, takes ownership, builds
systems from scratch.
* Engineering or food-technology background a plus.
